This week’s special was entirely thought up by my cook, Mike. One night he just blurted out “You know what would be awesome? Bacon Cheeseburger Sheppard’s Pie… with Bacon Mashed Potatoes on top!!” Well, he was right.
We started by sweating onions and garlic then adding pureed fire roasted tomatoes, bacon stock, chicken stock, Worchestershire, oregano and thyme.Then browned Northwest grass fed beef gets added along with peas and carrots that had been roasted with thyme. this gets heated to order with bacon and cheddar cheese and topped with mashed potatoes made only with bacon fat before going into the oven to brown.
I’m doing something a bit different this week. Mike and I love root beer and the like so I ordered the ingredients to make our own. They include, sarsaparilla root, sassafras, birch bark, cherry bark (I will make a batch with just this. Sooo delicious!), molasses, brown sugar and star anise. The first batch was very good but too strong. I thought that since alcoholic root beer is a thing now I could make a cocktail with it, and what better way to serve root beer (other than on its own) is ice cream?
